Notes
From Experience: Wins, Fails, and What Stuck
Weigh directly in the bread tin. Place the tin on your scale and add everything straight in. Fewer dishes, better accuracy, and more consistent results. No second rise needed. The machine handles everything in one cycle — no knocking back or reshaping. Follow your machine order. This matters more than anything for consistent results. Different machines vary slightly. If your machine has a gluten-free setting, use that first. Tested on Panasonic SD-2501. Results were soft, even, and consistent when following gluten-free mode instructions.
