About WEATZERO® and the name

Is it “Wheat Zero” or “WEATZERO®”? Our brand is WEATZERO®. You will sometimes see it written as “wheat zero” or “wheatzero”; and that is us. The name captures what we do: gluten-free, millet-based flour that bakes like wheat, with zero wheat in it. However you spell it, you will find us at weatzero.com.

Does WEATZERO® contain wheat? No. Despite the wheat-like sound of the name, WEATZERO® contains zero wheat and zero gluten. It is built on 50 percent ancient-grain millet and is designed for coeliac-friendly, gluten-free baking.

Who makes WEATZERO®? WEATZERO® was created by Shilpa, our founder, who set out to make gluten-free flour that bakes like wheat without the empty calories of refined-starch blends. It is an Australian business. You can read the full story on our About page.


Gluten and dietary questions

Is WEATZERO® gluten-free? Yes. WEATZERO® is a flour blend made with millet, a naturally gluten-free ancient grain, along with other naturally gluten-free ingredients like potato and tapioca starch. Each batch is independently tested in a certified laboratory before sale to ensure it meets strict gluten-free standards.

Is WEATZERO® suitable for coeliacs? Yes. WEATZERO® is tested to strict gluten-free standards, so it is suitable for people with coeliac disease as well as anyone avoiding gluten. We built it specifically for coeliac-friendly baking with real, nutritious flour you can trust. As always, we recommend checking the current product packaging for the latest details.

Is millet gluten-free? Yes. Millet is a naturally gluten-free ancient grain. It is not wheat and contains no gluten. It belongs to a completely different family of grains than wheat, barley or rye.

What about cross-contamination? Is it a real risk? Yes, it is a genuine risk to watch. Millet is gluten-free as a plant, but does not always stay gluten-free by the time it reaches your kitchen. Many mills and food facilities process wheat, barley and rye on the same equipment they use for other grains. Without strict cleaning and testing, tiny traces of gluten can transfer into the millet.

This is why “naturally gluten-free” and “safe for coeliacs” are not automatically the same thing. The grain is fine, and the handling is what matters. At WEATZERO®, we are careful about how our millet-based blends are produced, because they are designed from the ground up for gluten-free, coeliac-friendly baking. Each batch is independently tested in a certified laboratory to confirm safety standards.

Is WEATZERO® vegan, dairy-free, or nut-free? Our flour blends are made from plant-based ingredients including millet, starches and natural binders. For specific allergen information including dairy, nut and soy handling, please check the current product packaging, as this is the most accurate and up-to-date source. If you have a question about a specific allergy, contact us, and we will be glad to help.

Does WEATZERO® contain any additives or fillers? No empty fillers. WEATZERO® is built on 50 percent millet, with a small supporting squad of natural ingredients: potato starch for moisture, tapioca starch for stretch, and small amounts of xanthan and guar gum for structure and softness. The bread and pizza mixes also include psyllium husk, sugar, salt and baking powder to help dough rise. We skip artificial emulsifiers and excess binders.

Is WEATZERO® healthy? What are the nutritional benefits? Millet is naturally rich in protein, fibre, iron and magnesium, with a low glycemic index for steadier energy. Unlike many gluten-free flours made mostly of refined starch, WEATZERO® is built on nutrient-dense ancient grains. This means real nutrition, not empty carbs.


Baking with WEATZERO® All Purpose Flour

Can I use WEATZERO® All Purpose Flour instead of normal flour? Yes. WEATZERO® All Purpose Flour is designed as a gram-for-gram replacement for wheat flour. Weigh it the same as you would regular flour and bake as normal. For best results, always use kitchen scales rather than cups, as gluten-free blends measure differently.

Can I use WEATZERO® All Purpose Flour without any conversions? Yes. This is our core promise. If your recipe calls for cups of flour, simply convert to grams using the conversion table below, then use that exact weight of WEATZERO® All Purpose Flour.

No xanthan gum needed, no recipe adjustments required. This is what sets WEATZERO® All Purpose Flour apart from other gluten-free flours that require recipe modification.

Do I need to add xanthan gum or anything else? No. WEATZERO® already includes the right amount of binding ingredients, so you do not need to add xanthan gum yourself. Just use it in place of your regular flour.

Why do you recommend weighing the flour? Gluten-free flours are lighter and behave differently from wheat flour, so cup measurements can be inaccurate. WEATZERO® All-Purpose Flour is crafted for precise gram-for-gram swaps, so a kitchen scale gives the most consistent results every time.

What is the difference between the All-Purpose Flour, Bread Mix and Pizza Mix? The All-Purpose Flour is your everyday baking flour for cakes, cookies, muffins and more. About millet and the three grains in WEATZERO®

What exactly is millet? Millets are a group of highly variable, small-seeded grasses used as cereal crops. They are not a single grain but an agronomic group of nutri-cereals that are exceptionally hardy and thrive in dry, high-temperature conditions where other grains struggle.

Why is millet being rediscovered now? While millets were among the first crops domesticated by humans and cultivated for over 10,000 years in East Asia, they were sidelined by large-scale rice and wheat production. They are being rediscovered because they are Smart Foods: good for you through nutrition, good for the planet through climate resilience, and good for the farmer through low input requirements and hardiness.

What is special about Barnyard Millet? Barnyard millet is a nutritional powerhouse. It is the richest source of crude fibre and iron among the common millets. It is particularly beneficial for type 2 diabetics and is often used for porridges, snacks, and as a rice replacement. It contains nearly double the fibre found in quinoa.

What are the benefits of Foxtail Millet? Foxtail millet contains a high protein content of approximately 12.3 per cent and has excellent anti-hyperglycaemic activity. It is beneficial for overall immunity and is versatile in cooking. It works well in soups, gruels, and traditional batter-based dishes. Fun fact: to produce 1 gram of dry biomass, foxtail millet requires only 257 grams of water, while wheat needs nearly double that amount.

Why should I choose Proso Millet? Proso millet has the highest protein content among the millets, reaching up to 12.5 per cent, and shows very high antioxidant activity. It is highly efficient at photosynthesis, meaning it can fix carbon and grow even in very harsh, dry conditions.

Why does WEATZERO® use all three millet types? We blend three different millets together because they each bring unique nutritional strengths. Barnyard provides iron and fibre, Foxtail offers protein and immunity support, and Proso delivers antioxidants and climate resilience. Multi-grain blends offer higher biological value than single grains. A 50 per cent millet blend gives you the nutrition of ancient wisdom with the texture of modern baking.

The ultimate water saver: To produce 1 gram of dry biomass, foxtail millet requires only 257 grams of water, while wheat needs nearly double that amount. This makes millet exceptionally drought-tolerant.

Climate-smart crops: Millets are recognised for having low carbon and energy footprints. They are highly efficient at photosynthesis and can grow between 20 to 100 per cent faster than other crops, often completing their life cycle in just 10 to 12 weeks.

Orders, shipping and delivery

How much does shipping cost? Shipping costs are calculated automatically at checkout based on your delivery address and chosen method, including Standard or Express. Both are trackable services with delivery confirmation.

How long will my order take? Orders are processed and packed within 2 to 3 business days of payment confirmation, dispatched Monday to Friday. Once dispatched, Australia Post delivery times depend on your location. You will receive tracking details by email.

Can I track my order? Yes. Once your order is dispatched, you will receive Australia Post tracking information by email so you can monitor delivery.

Do you offer express shipping? Yes. Express shipping is available as a faster option, with cost and timeframe shown at checkout.

Do you ship internationally? Currently, we ship within Australia only.

Returns and payment

What payment methods do you accept? You can pay securely at checkout using major credit and debit cards. All payments are processed through a secure, encrypted checkout.

What is your returns policy? If something is not right with your order — for example, it arrives damaged, or you have received the wrong item. please contact us within a reasonable time of delivery, and we will make it right. We want every WEATZERO® baker to be happy with their order.

How should I store WEATZERO® flour? Store your WEATZERO® flour in a cool, dry place in an airtight container to keep it fresh. For best-before guidance, check the date printed on your pack.


WEATZERO® versus other gluten-free flours

How is WEATZERO® different from other gluten-free flour brands? Many gluten-free flours require conversions, additives, or do not bake like wheat. WEATZERO® uses 50 per cent ancient-grain millet plus carefully balanced ingredients so you can bake exactly like you did before. Gram for gram, no modifications needed.

Which gluten-free flour should I choose between millet, rice, or almond? It depends on your needs. Millet, like WEATZERO®, is nutrient-dense and bakes more like wheat. Rice flour is lighter but lacks nutrition. Almond flour is low-carb but has completely different properties.

What is the difference between millet flour and WEATZERO® flour? Plain millet flour alone will not bake like wheat. WEATZERO® is 50 per cent millet blended with potato starch, tapioca starch, and natural binders. It is engineered to replace wheat flour gram for gram.
